WITL Caol Ila 2010 - 12 Years Old

Caol Ila Distillery is famous for its consistently good single malts. The profile of this 12-year-old whisky aged exclusively in a second fill bourbon hogshead is close to the emblematic flavors of the distillery. Pure peat emerges on the nose followed by some iodized notes and sea spray. Fine lemon and olive are also present - they appear on the palate as well. In the mouth, the peat is distinct but not overwhelming. Fresh notes of the distillate: lemon and ash. A very slight vanilla influence coming from the barrel already well polished by time. The finish gives way to the maritime and peaty side - all in elegance rather than power. 

A pure and elegant Caol Ila; far from the usual vibrant WITL finishes but very close to the house style which makes us love the distillery so much. Beautifully controlled Islay peat with all its greatness.

The raven on the label may not be the cutest bird but it is considered one of the most clever animals. Caol Ila isn't the most spectacular distillery to see but it is one of the most efficient on Islay.
